Cheese Bread

Cheesy Cheese Bread has never been easier that with the addition of Zeelandia's Panoplus Nacho.

Ingredients

• 7500 g 75% flour 100%
• 2500 g 25% Panoplus Nacho
• 180 g 1.8% salt
• 250 g 2.5% fresh yeast (*or instant yeast 1/3 of fresh yeast)
• 5400 g 54% water
• 50 g 0.5% Gamma 500

Preparation

  1. For optimum water absorption it is recommended that 1st stage
    mixing (slow speed) is at least 8 minutes.
  2. Mix the ingredients to a well developed dough.
  3. Dough temperature 80°F.
  4. Scaling weight 150 or 350 grams.
  5. Round up.
  6. Intermediate proof 30 minutes.
  7. Flatten and decorate with a mix of both decorations.
  8. Place on baking trays and cut into 8 egual parts.
  9. Final proof 45 minutes.
  10. Bake with steam.
  11. Baking temperature 445°F.
  12. Baking time 16-20 minutes.

It’s possible to change rate flour/Panoplus. * minimum dosage 90% flour + 10% Panoplus. * maximum dosage 75% flour + 25% Panoplus.
