Soft Rolls with Panoplus Dark

Ingredients
• 7500 g 75% flour, 100%
• 2500 g 25% Panoplus Dark
• 400 g 4% fresh yeast (*or instant yeast 1/3 of fresh yeast)
• 200 g 2% salt
• 5600 g 56% water
• 50 g 0.5% Gamma 500
• 500 g 5% sugar
• 300 g 3% margarine
• 200 g 2% milk powder
• 200 g 2% olive oil
Preparation
- Mix the ingredients to a well developd dough.
- Scaling weight 1650 gram.
- Intermediate proof 15 minutes.
- Devide and round up.
- Final proof 60 minutes.
- Baking temperature 500°F.
- Baking time 7 minutes.
