1000 g Biscamix 1000 g egg


  1. Mix the ingredients during 7 minutes at top speed and 3 minutes at second speed with a whisk.
  2. Spread to 0.5 cm thickness on a baking sheet/paper.
  3. Steam with an open damper before baking! To avoid a loose top and bubbles.
  4. Baking temperature: Deck oven 465°F. Rotation oven 428°F. Baking time 7-8 minutes.
  5. Release directly from the baking sheet, to keep moist and rolling without cracks.
  6. Cover directly with plastic sheets.
  7. Keep wrapped frozen on stock.
